Ingredients(serves one)

  • 1 bag boiled udon noodles
  • Spring onions as garnish
  • Soup
    • 3 tablespoons soy sauce
    • 2 tablespoons mirin (sweet sake)
    • 1 tablespoon sake
    • 1 teaspoon powdered soup stock
    • 400cc water


  1. Finely dice the spring onions.
  2. To make the soup; mix the soy sauce, mirin, sake, powdered soup stock and water in a pan and bring to the boil.
  3. Boil the udon noodles in another pot.
  4. Drain the boiled noodles and place into a serving bowl.
  5. Add the soup to the bowl and add the diced spring onions and your favourite toppings.
