OKONOMIYAKI: 'As-You-Like-It' Pancake

Ingredients(serves one)

  • 50g standard white flour
  • 1 egg
  • 60cc water
  • 250g favourite ingredients (cabbage, pork, seafood, etc.)
  • Oil for frying
  • Onokonomiyaki sauce for topping
  • Mayonnaise for topping
  • Katsuobushi (dried bonito flake) for topping
  • Aonori (green laver seaweed) for topping


  1. Mix the egg and water in a bowl and add the flour in three parts.
  2. Add your favourite ingredients to the bowl and mix them.
  3. Heat a frying pan and shallow fry the chicken slowly over a gentle heat.
  4. Cook until the surface is golden brown and hard enough to be turned over. Turn over the pancake with a spatula.
  5. Turn over the pancake again and cook until the both surfaces are slightly burnt. Serve the pancake on a plate, spread the sauce and mayonnaise and sprinkle on the katsuobushi and the aonori for the topping.
