Ingredients(serves one)

  • Tonkatsu (fried crumbed pork cutlet)
    • 1 thick piece of pork loin
    • Flour for coating
    • 1 egg, beaten
    • Panko (Japanese bread crumbs) for coating
  • Oil for deep-frying
  • 1/4 onion, sliced
  • 2 eggs, beaten
  • Boiled rice as required
  • Stock
    • 1 tablespoon soy sauce
    • 1 tablespoon mirin
    • 1 teaspoon sugar
    • 15cc water


  1. In the following order coat the pork with the flour, egg and panko.
  2. To complete making the tonkatsu deep-fry the pork at 180°C until the surface is golden brown
  3. To make the stock; add the ingredients into a saucepan and bring to the boil.
  4. Add the sliced onion to the stock and cook until it becomes soft. Add the tonkatsu and cook for a little while.
  5. Add the beaten eggs around the edges of the tonkatsu and cook until soft-boiled. Serve the contents of the saucepan on top of rice in a bowl.
